Portland, Thanksgiving & Super Oatmeal Cookies

I know it’s been way too long since I’ve posted anything. I’ve been a bad blogger, I’ll do my best to make up for it.

So what have I been doing? Well I flew out to Portland at the beginning of November. It was beautiful! We went to Seattle and Seaside as well. Here’s some of my favorite shots from the trip:

It was an amazing week and my biggest tip, skip Voodoo, go to Pips instead. The doughnuts are fantastic and the Ginger Molasses Latte is amazing!!!!

Ok, back to healthy things. I was thrilled to find that even after all the doughnuts, seafood and yummy bad food I had on vacation I still managed to lose weight! I’m at over 20 lbs lost now! That was before Thanksgiving though, we’ll see where I’m at later this week.

So last week was Thanksgiving and I found myself craving something sweet on Sunday so I created these Super Oatmeal Cookies. They’re packed with good stuff, are delicious and most importantly filling!


Super Oatmeal Cookies

Oven: 375    Bake: 8-10 minutes    Makes: 36 cookies    Calories: 187
Protein: 3g    Fiber: 3g    Sugars: 14g    Carbs: 23g    Fat: 10g

3/4 c Butter, softened (next time I’m going to replace with coconut oil)
1 c Coconut Palm Sugar
1/4 c Sugar
1/4 c Brown Sugar
1 t Baking Powder
1/4 t Baking Soda
1/4 t salt
2 Eggs
1 t Vanilla
1 1/2 c Whole Wheat Flour
2 c Rolled Oats
1/4 c Chia Seeds
1/4 c Flax Seeds
1 c Chopped Pecans (or any nut you prefer)
1 c Raw Shredded Coconut (optional)
1 c Chocolate Chips (I used white because it’s what I had on hand, next time I’ll try dark chocolate)

1. Preheat oven. Beat Butter then add in sugars, baking powder, baking soda and salt. Beat until combined, add in eggs and vanilla. Beat in as much of the flour as you can then stir in the rest and stir in the oats, chia seeds, flax seeds, chopped pecans, shredded coconut and chips.

2. Using a spoon and your hand shape the cookies into 1 1/2″ balls. Place on an ungreased cookie sheet spacing 2″ apart. Bake 8-10 minutes. Allow to cool on the cookie sheet for about 1 minute then transfer to cooling rack to cool completely.

3. Enjoy with out the guilt!
